Mandarin Orange Chicken Salad
This Mandarin Orange and Chicken Salad recipe is super simple and loaded with flavor! It’s tossed with an amazing Legend Larry's Teriyaki based dressing you’ll want to put on everything!

Ingredients

  • 1/3 C Legend Larry’s Teriyaki sauce
  • 2 chicken breasts (~1-1.5 lbs); cubed
  • 2 T cooking oil
  • 4 oz pack of plain instant noodles
  • 10 oz pkg baby spinach; cleaned
  • 1/2 C slivered almonds
  • 15 oz can mandarin oranges; drained
  • 1/2 C chopped cilantro
  • 1/3 C rice wine vinegar
  • 1 T sugar
  • 1/2 C olive oil
  • 1 T toasted sesame seeds

Directions

  1. Mix the Legend Larry's Teriyaki, vinegar, sugar, oil, and sesame seeds together. Reserve 1/4 cup and cover and chill the rest until ready to be used.

  2. Marinate the chicken in a zip-seal bag or other sealable container with the reserved 1/4 cup of dressing for at least 30 minutes, up to 4 hours.

  3. Heat oil in a large skillet over medium high heat. Add the chicken and marinade to the pan and cook 5-8 minutes, until thoroughly cooked.

  4. In a large bowl, add the spinach, noodles, mandarin oranges, cilantro, chicken, and almonds and toss well.

  5. Stir the dressing well and pour it over the salad and toss again. Serve immediately or cover and chill until ready to be served.
